It's about a love that can end nowhere, a couple that believed they could find a happy ending (we believed, we'd catch the rainbow, ride the wind to the sun, sail away on ships of wonders...), but their love can only exist hidden from view, reenacted only from the time evening falls until dawn, when the poor stable boy can lay his wealthy lady (wearing a laced dress), on his bed of straw, but they cannot escape reality, and his agony about it torments him (so bless me... come the dawn). It's about two people with different status in society, not being able to create a life together, although their love for each other runs deep.

To me it seems the song means, that a Man has "caught his Rainbow" the rainbow being a Woman he had so loved and long desired Now that he has her love she is coming to him daily to give him that love he so long desired and now he is satisfied with having her love. Like when we try achieve something we desire it's like the "Pot of gold at the end of the Rainbow". He so much wanted to have her love, he worked hard to get it and he has it now. The Man is happy he reached his pot of gold at the end of the rainbow the Woman he always desired.
