This song is heavily bibical. Some would say it's about judas and how he betrayed jesus after the last supper (the "bitter herbs", a reference to the passover; "bread and wine", "the night I betrayed my king"). I thought this too at first.
But on closer examination... There were other people at the last supper. One of them was a disciple of jesus known as simon peter. Peter was told by jesus that, despite his oaths of loyalty, he would betray jesus "three times before the cock crows". Peter refused to believe this. But, when they came and arrested jesus, Peter followed and came to the building where all the scribes and pharisees were meeting to basically try him and send him to pilate. People (servants and such) hanging around the building who recognized Peter asked if he wasn't one of jesus's followers. Peter lied and denied their accusations, three times. Only after he heard a cock (here meaning "rooster") crow did he remember jesus's prophetic words, and "weep bitterly" or something like that, realizing he had indeed betrayed his "king".
This is perhaps also about being a christian and feeling pressured to conform to the expectations of the world, to the point where one might even deny one's true faith.
However, it is worth noting that Peter later was forgiven by jesus, and told to "feed my lambs", to preach the gospel to others and help set up the early christian chruch, though this may have no implications as far as the song.
It seems as though vheissu in general is about how people are caught in trials where their faith is challenged in these turbulent times.
