Not necessarily an interpretation, but it really speaks to me as the partner of someone with an eating disorder, slowly watching them melt away and wishing you could take them somewhere safe or do something to save them

I think that the song means that she is doing everything that she can to keep her lover from leaving her and that she feels that they no longer love her and they are slipping away from her like the snow in spring time.

I think the snowman is cocaine. And she’s talking about a lover she wants to leave, meaning let go of her addiction. However, she can’t so now she’s saying she’ll love it forever until it takes her to the sun or the light or the truth and death, but she’s still gonna keep loving the snowman because that’s her addiction and she’s dependent. So she’s running away from her life and reality, with this drug.
