I think "sick like Audrey Hepburn" is the slang use of the term "sick", meaning amazing, incredible, and beautiful. Because she was...and, I imagine Seth and Scott would agree with that.

There are several beliefs about what this songs meaning is,most people like generally claim that the lyrics have simple meaning: two people are in love,the woman helped the man out of a dark place, and in January they will get married.
But I personally think the lyrics have more meaning behind them, though what is said above does sum up a vast amount of the song..
In my opinion, all of the verses say something different about the two people in the song... Some are simple, but I think some are more complex than others, for example
"And I was sick with heart ache, and she was sick like Audrey Hepburn, when I met her"
This could be referring to either the fact that Audrey Hepburn was bulimic and anorexic, or to in breakfast at tiffany's, she didn't believe in love and had "The mean red's" (like the blues- but way worse), I personally think it is referring to the anorexia/bulimia part, because most of their songs talk about a girl with self esteem issues, but then again, it could be talking about how she couldn't believe in love and just referring to the movie. Either/or.
the next line
"But we would both surrender, true love is not the kind of thing you should turn down"
I think means that they pulled eachother out of hard times.
The next most mysterious line is
"I hope that I don't sound too insane when I say there is darkness all around us"
I think that is saying that they are still surrounded by problems, what ever they may be, or maybe no one wants them to marry, but he can't help but doubt a little, and then the next line
"I don't feel week but I do need sometimes for her to protect me, and reconnect me to the beauty that I am missing"
I think that can mean a lot of things
It could mean that he isn't completely doubtful about the "darkness" (whatever that may be/mean" but he needs her to help him, or maybe it means that in life he needed someone to help him, I'm not totally sure what that really means, but that ties into the "Reconnect me to the beauty that I'm missin' " part, if it goes along with the idea that he needs someone to help him cope/ help him through his struggle, then I think this just ties in with that because he needs to understand and remember what true beauty is and appreciate things, or it could just mean she helps him appreciate the beautiful things in life and make him more understanding.
The next part you could go with a few ideas of meaning- technically you could take it either deeply, or simply- I think it is meant to be taken both ways:
"She knows which birds are singin', and the names of the trees where they're performin', in the morning"
In a way it could be a statment of just simply what he loves about her, OR/and an example of how amazing she is and how he appreciates the way she thinks (yeah, I guess that is kind of deep too..)
OR it could tie in with what I just said, and go into even deeper meaning by also tying into the idea of how she shows him the simple beauty in things- and that is his best example.
"And in January, we're getting married"
That line explains all for itself, right?

The thought of any meaning to anything in this song makes me happier than ever.
Why?
Who knows.
And who cares?
After all, it's best to appreciate the beauty instead of looking for anything deeper, I guess.
