In my opinion, this song marks Gaga's claim for eternal genuineness. She remarks how regardless of the money and material profit something may offer, she will pursue what is true to her and her desires for life. She wishes to avoid the construct of current-artists conceding to their record labels & management and letting them run her life. This song was her promise that she will stick to her guns and remain who she is, regardless of the criticism or rebuttal or trends of existence. :-)

This is tied to a old slang term paper tiger. Paper meaning "fake" so in the song she is simply saying she doesn't want someone who is pretending to be gangsta (cool). "Than someone just as real, as fabulous" She wants someone real not someone trying to be popular/cool. "won't sign no monkey papers, I don't do funny business, not interested in fakers" She doesn't want to be apart of this guys life because he's just a faker.
